I have also spoken with Robert and he did a great job of getting me in touch
with my area rep and setting up an evaluation period. My demo unit should
arrive today. I heard, however, that XServ demo units are hard to come by
due to popular demand for them. In my experience Apple has been very
accomodating when it comes to providing evaluation hardware.

You should talk to Robert Lawrence Kehrer <kehrer@apple.com> who is the
main person behind Apple Life Sciences in the US, I started by talking to
him, he referred me to Apple Singapore, then Apple Singapore a few days
later delivered some loan units.

Of course you need to show them you will be doing something useful and
interesting in BioIT with the Xserves and that you are interested in
buying them...
